Cucumber salad with onion and tomato:
· 1 Kirby cucumber cut lengthwise, chopped fine
· ¼ red onion, finely sliced
· Medium plum tomatoes-5, seeded and finely sliced
· Red wine vinegar
· 2 tablespoons of extra virgin olive oil
· Black pepper
· Coarse salt
· Crusty brown bread
Toss the onions, cucumber and tomatoes with the olive oil, and two splashes of red wine vinegar, salt and pepper. Let this stand for twenty minutes before you intend to serve it. Serve it with crusty bread to bring out the flavor.
